Quick and Easy Instant Pot Sinigang Recipe


Hey friends! As some of you might know, our team is comprised of Filipino women, so we've decided to share a classic Filipino comfort dish that's perfect for the gloomy days - sinigang! I'm beyond excited for today's post because not only are we going to talk about food, but we're also sharing a part of our culture with all of you.


Sinigang is a tamarind-based sour soup that is guaranteed to hit the spot with the first sip. I personally love to drown my rice in this soup when I have it and I could honestly eat this for days - it's that good. The best part of this dish is that its super easy to do and it's loaded with nutrients. Let's get into it!


Here are the ingredients you'll need:

  • 2 cloves of garlic

  • 1 onion

  • 2 tomatoes

  • 2 tbsp oil

  • 2 lbs pork loin

  • okra

  • 3 heads of bokchoy

  • 1 eggplant

  • salt & pepper to taste

  • 1 package Sinigang soup mix

  • 2 tbsp fish sauce (secret ingredient!)

  • water





Instructions:

  1. Use the sauté option on your Instant Pot. Add onion, garlic, tomato, and pork in the pot. Season with salt and pepper and cook until pork is brown. Press cancel to turn off sauté mode.

  2. Add eggplants and okra, water, and half of the Sinigang mix. Turn on manual mode and allow to cook for 15-20 minutes. Use the quick release knob to release pressure until the pot is safe to open.

  3. Add in bokchoy, cook for an additional 2 minutes and season and add fish sauce to taste.

  4. Serve with your favourite kind of steamed rice. Enjoy!


That's it! Its super quick and easy. This is a staple dish in any Filipino household. It's a delicious comfort dish that we're sure you'd enjoy. You can also substitute the protein that fits your preference or you can also keep this vegetarian and not add any meat at all. Just add more hearty types of vegetables to the broth like taro and radish. If you want to add a bit of kick to it, try adding some green chilies.
